OVEN FRIED GREEN TOMATOES

I get emails from people who had bookmarked old recipes from the OG blog asking if I plan on adding them to the new one & these oven fried green tomatoes are by far the most requested! I’ve made a few tweaks to the recipe over the years (including a secret ingredient that I think makes ALL the difference) but these have remained a staple in our summer rotation. Green tomatoes are just unripe red tomatoes and I much prefer the texture and flavor of these. I still have never had an actual deep or pan fried green tomato because I like this oven fried version so much.

My secret ingredient to make these super crispier (even in the oven!) is extra crispy Shake ‘N Bake. I figured this out completely by accident one time when I thought we had more breadcrumbs in the pantry than we did. I was about 1/2 cup short and I knew I always use almost every bit of the 2 cups my recipe calls for. I had plenty of Shake ‘N Bake on hand because I love using it on chicken and I figured it was worth a shot to add a packet to the breadcrumbs I did have. My dumb luck proved to be an incredible addition to the recipe as this made them so crispy and it has even more seasoning in it.
