Chia Yogurt + Fruit Jars
I posted this super simple “recipe” on my Instagram a few days ago and I thought it would be nicety start sharing more recipes like this! I love quick, easy, prep-ahead breakfasts that I can eat once I get to work in the morning and I thought you guys might too. This breakfast is great for summer because the yogurt and chia seeds deliver a power packed, protein rich component that leaves you feeling full a lot longer. The fruit is great because you can change this depending on what you love or what kind of mood you’re in on any particular day. Our grocery store just started getting in peaches and after leaving them in a brown paper bag for a couple of days they were perfectly juicy and to die for!
I make this the night before usually so I know what kind of fruit I’m in the mood for but you could make a few of these today and then have some great/healthy breakfast options all week long!
In a jar I mix:
– 1/2 cup plain greek yogurt
– 1 tbsp chia seeds
Then I top it with:
– about 1 cup fresh fruit
This could be anything from berries, banana slices, grapes, oranges, grapefruit, etc!
mmm, I love chia seeds but I always assumed quite a few- fairly expensive- tablespoons would be needed to make a chia pudding… glad to find that only 1 tablespoon is suffice!
Yes! This is a great alternative to chai pudding and I agree that less is sometimes more!
I’m always looking for different make ahead breakfast ideas. Chia seeds are so simple yet you can make such great make ahead breakfasts with them!
