It is finally starting to warm up here in New York. After a brutal winter and springtime snow, rain + high winds, it was so refreshing this past weekend when the temperatures broke in to the 60s and continued to climb as the week progressed. I love this time of year when you can finally bring your patio furniture back outside and enjoy the fresh air. One of my favorite things to do on the weekend is sit on our back patio with friends and listen to music, play cards and enjoy some great cocktails + food! I’m always looking for something that’s light + refreshing and (the toughest part!) somewhat healthy so that I don’t totally wreck all of the hard work I put in during the week.
When I was first contacted about trying out Captain Morgan’s new flavored white rums, I couldn’t wait to get my hands on them! When the box finally arrived with three different flavors – grapefruit, coconut and pineapple – we ran to the grocery store to grab ingredients to start experimenting. I can’t say enough great things about all of these flavors. They’re light + refreshing, super flavorful and at just $15.99 for 750ML bottles you can’t go wrong!
I came up with three different cocktails, one for each flavor and this recipe is for my favorite of the three – The Pineapple Mojito. Remember when I did the post for my DIY Blueprint Juice cleanse and I mentioned that the P.A.M juice would make a fantastic cocktail?? Well, this is it! Fresh mint muddled with chunks of pineapple + lime wedges topped with Captain Morgan Pineapple Rum and club soda… this is amazing! I love that the pineapple is naturally sweet so you don’t have to add sugar like a typical mojito and the ingredients will make you feel much less guilty while you sip your cocktail!
These are easy to make as single-serving cocktails or made in a big batch for a pitcher full if you have friends over. Enjoy these this weekend and keep an eye out for the other two cocktail posts coming soon using the grapefruit + the coconut rum!
In a tall glass combine ¼ cup fresh pineapple chunks, ¼ cup fresh mint leaves and 2-3 lime wedges. Muddle everything together, getting as much juice out of the pineapple as you can.
Fill the glass off with ice and pour in one shot of Captain Morgan Pineapple White Rum.
Top the drink off with club soda and use a long spoon to carefully stir everything together to mix!
