Edamame + Avocado Tuna Salad
This is not your average tuna salad! I’ve swapped out the heavy + unhealthy mayo and replaced it with a delicious mix of avocado, dijon mustard + lime juice. The tuna gets tossed in the avocado mixture along with diced red onion + edamame. It’s seriously THE BEST tuna salad ever and I can’t get enough of it. It’s packed with protein + omega-3s and beats the “real thing” any day! I like to pack this for lunch along with a piece of Ezekial Sprouted Grain Flax Bread and some grape tomatoes. That way I can eat some on the toasted bread, some with the tomatoes and some on its own.
This makes 3 really large servings (or divide in half for 6 smaller ones) and here is the nutrition for those of you tracking:
Start off with a REALLY ripe avocado, you’ll need to mash this with a fork and need it to be as creamy as possible to picking a ripe one is key! Put both halves in a medium bowl along with the fresh juice from 1/2 lime, 1 tbsp whole grain dijon mustard, a pinch of salt + pepper. Mash everything together with a fork and then add 2 cans tuna, 1/4 cup diced red onion + 1/2 cup shelled edamame. Mix everything together and enjoy!

Serves 3-6
1 avocado
fresh juice from half a lime
1 tbsp whole grain dijon mustard
a pinch of salt + pepper
2 cans tuna
1/4 cup diced red onion
1/2 cup shelled edamame
