I think I mentioned this dip a couple summers ago in one of my Instalife posts but after making it over the weekend I realized I never shared the recipe with you! This stuff is awesome – it goes so well with so many different things and it’s definitely a much healthier alternative to a lot of things if you’re looking to cut back this year. Thick + creamy greek yogurt gets dressed up with fresh garlic, lemon + dill… it’s super flavorful and filling without loading up on calories. I LOVE this with veggies but it’s also great on grilled chicken, with some fresh toasted pitas, mixed with some warm potatoes for a potato salad or thinned out and used as a salad dressing. Here are the nutrition facts for those of you tracking (makes four 1/4c servings):
Start off with 1 cup plain greek yogurt in a large bowl.
Finely mince 3 cloves of garlic + add it to the yogurt. Note that this will make you’e dip very garlicky (is that a word? lol) which I like but if you want something more mild use 1 or 2.
Squeeze in the juice from half of a lemon + the zest from 1/2 a lemon as well. This adds a bright note of flavor to the dip and accentuates the flavor of the dill + garlic.
Remove fresh dill from its stem and finely chop it, you’ll need about 1/2 cup fresh chopped dill total.
Add that to the bowl with a pinch of salt + mix with a spatula to combine.
I like to throw my dip in a jar and keep it in the fridge over night. This lets the lemon juice work its magic and meld all the flavors together.
Greek Yogurt Dill Sauce
Makes four 1/4 cup servings
1 cup plain greek yogurt
1-3 cloves garlic, minced
1/2 lemon, both juice + zest
1/2 cup fresh dill, chopped
pinch of salt
Combine all ingredients in a bowl, mix to combine. Let sit overnight in refrigerator before using.
