DIY Chipotle Corn Salsa & Vinaigrette
As I mentioned in my latest favorite things post, I have discovered Chipotle and cannot get enough, I think their salads are the best thing ever. I get mine with lettuce, chicken, sautéed peppers & onions, mild salsa, corn salsa, sour cream and cheese with the chipotle lime vinaigrette. After going there for the 20th time I realized that the only special thing in these is the vinaigrette and the corn salsa. I did a little digging online and figured out both would be pretty easy to replicate and set out to try it.
The corn salsa is a simple mixture of corn (of course), jalapeno, red onion, cilantro and lime juice. It sounds simple but it makes all the difference in this salad! The sweet creaminess from the corn is offset by the fresh tang of the lime juice and heightens the flavor of everything else. The vinaigrette is a super simple dressing with chipotle peppers in adobo sauce, olive oil, cilantro, lime juice, garlic and some herbs. It’s so good and just a little bit goes such a long way!
If you’re like me, you’ll love the simplicity of making these two ingredients at home and then making your own Chipotle for a lot less money. I like to use these to make my own salads but they’re great for making your own rice bowls or even burritos! As corn is starting to become available locally here, I know this is something we’ll be making all summer long! These recipe makes about 4 servings of the corn salsa and two servings of the vinaigrette so you can adjust to your needs.
To make the corn salsa:
1.Carefully remove the kernels from two shucked ears of corn. 2.Seed a jalapeño and chop it into fine pieces. 3. Combine the jalapeno in a bowl with the corn, a diced half of a red onion and a large handful of chopped cilantro. 4. Squeeze the juice from half a lime into the bowl, season with salt and pepper and toss to combine.
To make the Chipotle-Lime Vinaigrette:
1. Put ¼ cup extra virgin olive oil into a bowl and add the juice of one fresh lime. 2. Add ½ tbsp of canned chipotle peppers in adobo sauce. 3. Stir in 2 tbsp freshly chopped cilantro and a minced clove of garlic. 4. Add 1 tbsp ground cumin. 5. Whisk everything together to combine. 6. Season with salt and pepper to taste.
Chipotle Corn Salsa
2 ears of corn, shucked and clean, with kernels cut off
1 jalapeño, cleaned, seeded and diced into fine pieces
1/2 red onion, peeled and diced
1/2 fresh lime, just the juice
large handful fresh cilantro, chopped
salt & pepper
Combine all ingredients in a bowl except salt & pepper, toss together and then season with salt & pepper to taste.
Chipotle Lime Vinaigrette
¼ cup extra virgin olive oil
1 fresh lime, just the juice
½ tbsp of canned chipotle peppers in adobo sauce
2 tbsp fresh cilantro, chopped
1 clove of garlic, minced
1 tbsp ground cumin.
salt & pepper
Combine all ingredients in a bowl, except salt and pepper. Whisk to combine and then season with salt & pepper to taste.
