Taco Ring

I made this last weekend for opening day of the NFL and couldn’t wait to share it with all of you so that you could make it this weekend! I meant to post this earlier but the great thing about it is that it’s so unbelievably simple that you still have time to get supplies and make it in time for the four o’clock games! I made this for the first time a few years ago when my parents were having a bunch of people over to watch the Super Bowl and it was a huge hit! Taco meat and cheese stuffed inside a ring of croissant dough garnished with all of your favorite taco toppings, this is great for a party. When I asked my husband for a request for last weekend he couldn’t decide between this taco ring and my Buffalo Chicken Stromboli, so I filled a quarter of the ring with the stromboli filling and it was pretty good. Like I said, this is super simple and a real crowd-pleaser so make it for the afternoon games today or bring it to next weekend’s tailgate!

Start of by figuring out what plate or dish you want to serve your finished ring on so you can ensure it will fit (ask me how I know to do that first lol). Trace the dish’s bottom onto a piece of parchment and put that parchment circle on a rimmed baking sheet and preheat your oven to 375 degrees. Take two pre-made rolls of croissants and separate the triangles. Overlap them in a circle as shown in the picture below making sure to follow the outside line of your parchment. Heat up a sauté pan on medium heat and add in 1.5 lbs 90/10 ground beef. (If you want to do two fillings like I did, I just did 1 lb of beef and made the stromboli filling according to this post.) Break up the ground beef with the back of a wooden spoon and add in a packet of taco seasoning once it starts to brown. Stir in 1 cup shredded taco cheese.

Scoop the seasoned beef and cheese onto the prepared croissant circle as shown below. Next, take the tip of one triangle at a time, fold it over the filling and then tuck the excess under the circle until the whole thing is encased. Brush the croissant with an egg white and sprinkle the ring with about 1/2 cup more of the cheese. Bake until golden brown, about 20 minutes and let cool out of the oven on the baking sheet for just a couple of minutes before moving it. Here’s the tricky part… you want to take a spatula and loosen up the ring from the bottom. Slide out the parchment circle and using two spatulas at a time (one on each side) slip the ring onto your serving dish.

Fill the center of the ring with whatever you like… I used shredded lettuce, diced tomato and fresh salsa in a bell pepper. You can serve this with tortilla chips if you like, but I like it on it’s own especially with all of the toppings!
