Spice Rubbed Cod with Lemon Rice
This is my second of three menus for the Valentine’s Day (find the first one here) and what makes it great is how light the dinner is, saving plenty of room for all those decadent desserts! Cod rubbed with a coriander spice mixture that’s steamed over lemon basmati rice and zucchini, this dish is fit to impress while keeping you out of the kitchen so you can enjoy yourself! If you don’t like fish, you can always make the rice separate and rub chicken or pork with the spice before grilling or roasting it.
Ingredients: 1 tbsp plus 1 tsp unsalted butter, 1 small yellow onion (finely chopped), 2 garlic cloves (finely minced), 1 cup white basmati rice, 1 tsp poppy seeds, 1 tbsp finely grated lemon zest, 1 tbsp fresh lemon juice, 2 cups low sodium chicken broth, 1 medium green zucchini (cut into half moon slices), coarse salt and fresh ground pepper, 1 lb of cod or other firm white-fleshed fish (cut into 4 filets), 2 tbsp ground coriander, 1/2 tbsp ground ginger, 1/2 tbsp smoked paprika, 1/2 tbsp coarse salt, 1 tsp ground cumin, 1/8 tsp ground pepper
In a medium skillet with sides, melt the butter over medium heat. Add the onion and garlic and cook until the onion is soft (about 4 minutes). Stir in the rice and the poppy seeds, cook while stirring for 1 minute. Add the lemon zest and juice, the broth and zucchini, season with salt and pepper. Bring to a boil over medium high heat. Reduce to a simmer, cover and cook for 13 minutes.
While the rice is cooking, make the spice mixture and take the fish out of the refrigerator. Combine the coriander, ginger, paprika, sat, cumin and pepper in a small bowl and whisk together. Pat the fish dry with a paper towel and rub with the spice mixture.
Once the rice has cooked covered for 13 minutes, uncover and arrange the fish on top of the rice closely in a single layer. Cover again and cook until the rice is tender and the fish is opaque throughout, 5-7 minutes.
Take the fish out of the pan and fluff the rice with a fork. Serve the fish over the rice and zucchini. The fish should be tender and flakey.
