Bourbon Balls

This recipe came to me all the way from Ft. Lauderdale, Florida from a woman my mother-in-law works with and  I am glad she passed it along because these are really good! A big thank you to Janet Snyder… these gooey and delicious little balls rolled in confectioner’s sugar have rounded out my Christmas baking!

Place the 1 box vanilla wafer cookies,  1/2 cup walnuts or pecans, 1 cup confectioner’s sugar and 3 tbsp cocoa powder in the bowl of a food processor and pulse until ground. Add in 1 tbsp almond paste and pulse until incorporated. Add 1/2 cup light corn syrup and 1/4 – 1/2 cup liquor of your choice (I used Maker’s Mark but you can use other liquors like Amaretto, Rum or any kind of bourbon you like). Measure out about one tbsp sized balls of dough and roll them into some confectioner’s sugar. Let set up on a baking sheet and store in an airtight container.
