Apple Braised Turkey Thighs

I know that some of you may just be cooking for for two this Thanksgiving and that many of you don’t celebrate Thanksgiving in your part of the world, so I wanted to leave you with a post that’s a great recipe for any time. I’ve heard a lot of discussion this year about cooking turkeys in pieces rather than roasting one whole (to save time and stress) so this would be a great way to cook the thighs. Apple Bourbon Mojitos

Later in the week I’ll do a post on all the amazing food we ate while in Manhattan, but in the meantime I wanted to share a drink I concocted before we left on vacation! We had gone out to eat a few days before we left and had a version of this drink but I tweaked it a bit to make it even more delicious. I packed up all the ingredients and took it on the road with us for the first couple legs of our trip, a hotel room at the best steakhouse in town and then to Philadelphia. One by one my husband’s old teammates and friends stopped into our room as word got out that I had packed a muddler and was making delicious cocktails… I think by the end of the weekend every one was a fan! Lime and fresh mint are muddled together and topped with bourbon, sweet apple cider and a splash of ginger ale making this the PERFECT go-to drink for the fall!  Click here to get the recipe and see how it’s made!

Cinnamon Ice Cream


I started making my own ice cream a few years ago and nothing beats it for a number of reasons… it tastes better, you know exactly what is and isn’t in it, it’s a lot cheaper to make and it is so easy! I made this cinnamon ice cream to go along with the apple pie that I made last weekend and it was the PERFECT combination. I had some left over so one night this week I made caramel sauce, hollowed out some apples and served the ice cream in them with the sauce and walnuts on top (pictured to the left here)… they were incredible! A lot of people are intimidated by the thought of making their own ice cream but trust me, it couldn’t be any easier. You don’t need a fancy ice cream machine either… I know department stores sell them from $90 ranging all the way to $450, but I gotta tell you… I have a Hamilton Beach one that cost me $25 and it gets the job done just fine!
